Black and White Stripes

This is one of those random posts that starts with an awning from Lowe's and ends with fashion.  I'm taking about black and white stripes!  I'm on a black and white stripe kick right now.  I am in the processing of more house remodeling and have been looking into replacing my awnings.  I was amazed that Lowe's carries this stripe and iron open end style and was even more please with the price.  The other photos are of things I am admiring in black and white.

Seattle Chocolates

 I have been meaning to do a post on these for a very long time now.  I found these special gems over 6 months ago.  I ran across them at a furniture boutique in Knoxville, TN.  I walked out with a full paper bag of them just after one sampling.  My batch is about to run out, but I can assure you I will be calling in an order soon.  They are literally the best CHOCOLATES I have ever put in my mouth.  With a low melting point, Seattle Chocolates is a Seattle, WA based company who makes European chocolates from all natural ingredients.  And, I can assure you they are pretty tasty.  They make great gifts for birthdays or holidays, if you are looking for a unique little happy.  Please do yourself a favor and order some.  The truffles are my favorite.  But go to there website to see what all unique gifts they offer.  PS... San Juan Sea Salt is my fav!

The Skinny...

If you are like me, you pin new recipes on Pinterest all the time. If you are also like me, some of the attempts at making these are great and some are epic-Pinterest fails. I love hearing that a Pinterest find actually worked and was good, whether that be a DIY project or a recipe. That being said, I thought I would share with you all my latest Pinterest recipe success!

As bathing suit season rapidly approaches, I am attempting to eat better and work out more. I found this pin for "skinny enchiladas" and was of course, curious, and doubtful at the same time. I love Mexican food and really don't think "diet" versions are all that great. This recipe, however, will become a staple of mine when the craving arises. It did have that "diet" taste to it only because it wasn't dripping in sour cream and cheese, but the flavors were all there and they were very filling. These will definitely satisfy my cravings and save me from the calories! 


Skinny Enchilada Filling

9 Tortillas (low Carb La Tortilla)
1 1/2 cups shredded cooked chicken breast meat
1 cup chopped onion
1 cup chopped bell peppers
1/2 cup Non-Fat Greek Yogurt
1/2 cups Shredded Low-Fat 4 Cheese Mexican Cheese
 Skinny Enchilada Sauce
3/4 cup Salsa
1/4 cup Non-Fat Greek Yogurt
1/4 cup Low-Fat Shredded Cheese
1.) Preheat oven to 350 degrees, and Lightly spray a 9×13 inch-baking dish with non-stick spray.
2.) Sautee onions and bell peppers in a small skillet using cooking spray till onions are lightly brown.
3.) Mix sautéed veggies with non-fat greek yogurt, chicken, and cheese (this looked like chicken salad to me)

4.) Spread 1/4 cup chicken mixture in the middle of each tortilla and roll into a small burrito. Place seam down into baking dish.

5.) Mix Salsa and greek yogurt in a small bowl and spread evenly onto of tortillas, Sprinkle Cheese throughout.

6.) Place foil over dish and bake Skinny Enchiladas for 15-20 minutes.

You can add and modify as you like with spices and veggies such as other peppers, onions, cumin, etc. 

There are only 150 calories per enchilada (if you follow the recipe)! Be careful with the cheese- it is the only way to keep those calories low. Trust me, it was tempting to sprinkle more than the recipe calls for…

I came across these pics on one of my favorite blogs, and I couldn't help but notice how chic a tie-neck blouse looks under a jacket. I've always loved that a bow blouse adds a feminine touch to any look, but never really thought of it as a versatile layering piece.

Daring Design

For as long as I can remember, I have been admiring the work of Kelly Wearstler. I know there are people who are tired of her daring, bright and eclectic interiors, but I am not one of those people. Every time I see something she has done, I find myself studying each photo. There are so many interesting elements in every space. Her creativity is amazing to me. This Bel Air residence was in the January issue of Architectural Digest. I am not sure I would want to live in a space this busy, but I certainly appreciate it.

Downton Abbey

I know you are probably getting tired of hearing about Downton Abbey but if you have not jumped on the band-wagon, I highly suggest you start.  This show films at a little place called Highclere Castle.  The house is huge and not to mention amazing.  Everything about this show appeals to me: the time period, the setting, and the fashion!  I will say though, I am quite ticked about Sybil!  Otherwise, I am still very much enjoying this season.  Check out all of the interesting clothes that are featured on the show.

Today I am all about the Barefoot Contessa.  The other day I was watching the food network "easy listening television" and Mrs. Ina Garten came on.  She is my favorite; I love her.  Like, she is in my top 5 people I would want to  be.  Love her, her house (inside & out), her kitchen, her cooking pots, and I especially love her lamps on her kitchen island.  She is basically, to me, a badass.  With all of that being said, I am featuring a couple of her recipes today on the blog.  These recipes below, like Lindsay, make me yearn for spring.  These are great recipes for a spring evening in your backyard.....

The Winter Blues (and some green)

Happy Tuesday everyone! How crazy has this weather been lately? One day it is sunny and high 60's and then the next it is below freezing temps. The cold days are really making me dream of spring and wishing it would get here sooner than later. I thought for this post I would take a positive spin on the winter blues I have been having lately! Like most people, I'm not so great at keeping New Year's resolutions. It's not that I don't have good intentions - I do! Or at least I think I do...with the exception of the three years in a row that my resolution was to take more pictures. (My friends are all laughing at this one!) It's just not happening, as evidenced by our five year anniversary trip to Miami. Not one pic of me and William. Not one.

So this year I tried to keep it easy, fool-proof even.

Eat Breakfast Everyday.

That's it.
