Pumpkin Spiced Donuts

Tell me this picture didn't just catch your eye. It definitely caught mine. Yum!! Thanksgiving is tomorrow and food is on my mind. Every year as the holidays get close, I start to crave all things pumpkin. Luckily, I stumbled upon this yum donut recipe. The great thing about these pumpkin donuts, at least for me is that they are gluten free! I found this great recipe on Lisa Thiele's blog, With Style and Grace. If any of you readers are gluten intolerant or just love healthy cooking, you should check out her blog. It is great! She takes pretty pictures of her recipes too!

Pumpkin Spiced Gluten-Free Donuts

2 cups of gluten free flour (all purpose flour if no allergies)
1/2 cup of brown sugar, packed
1 1/2 teaspoons of baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/2 cup canned pumpkin
1 egg
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
1/3 cup milk (almond milk for dairy free)

For Coating:
Cinnamon and Sugar Mix (2/3 cup sugar & 2 tablespoons of cinnamon)
1/2 cup butter, melted

Preheat oven to 350 degrees, Spray a 6 cup donut pan and set aside
In a large bowl, sift together flour, sugar, baking powder, salt, ginger, nutmeg, cloves until well combined.
In a separate bowl, whisk together pumpkin, egg, vanilla, applesauce and milk well. Carefully fold the wet mixture into the dry mixture, mixing until incorporated. Be careful not to over mix.
Divide the dough in the prepared donut pan. Bake for 10-12 minutes until lightly golden. Remove from oven and let rest in pan for a few minutes before transferring to a wire rack for cooling.
For coating, (if serving immediately) dip the donuts into the melted butter and then into the cinnamon/sugar mixture.
