Mexican Pulled Pork Tacos

Let me start by saying, I am not a great cook! So, with that said, I love finding easy recipes that taste like you've spent hours in the kitchen slaving and you really haven't. Well let me tell you, this pork taco recipe is one of those! I found it while browsing around on pinterest one day. It really is a great place for people like me with a cooking handicap to find easy weeknight recipes. Anyway, I saw this picture below and was immediately sold. I love pulled pork and love all Mexican food, so I decided to try it.


Slow Cooker Mexican Pulled Pork Tacos


Serves 4


1lb. of pork tenderloin

1 - 15oz can of tomato sauce or 1 - 12oz jar of salsa

1 tablespoon chili powder

1 tablespoon of ground cumin

1 tablespoon of brown sugar

1 teaspoon of cayenne pepper

1/2 teaspoon of salt

3 cloves of garlic, minced

Place pork in the base of your slow cooker. In a small bowl, stir together all remaining ingredients. Pour evenly over pork. Cook on low for 8 hours. When done, shred the pork with two forks, pulling against the grain of the meat. Serve in warm tortillas with shredded lettuce, chopped tomatoes, grated cheddar cheese and sour cream. Garnish with chopped scallions.

This is my version. I served mine on hard flat corn taco shells. I also added black beans and jalapenos. I am obsessed with jalapenos! Pretty good stuff, you should try it!
